Fireside Feast is hiring Prep / Line Cooks to support food preparation and service execution for our seasonal outdoor dining experience in Ketchikan, Alaska. This role helps prepare ingredients, sauces, proteins, sides, and service components before guests arrive, then assists with buffet setup, restocking, portioning, and kitchen support during service.

This position is a great fit for someone who is detail-oriented, organized, and comfortable working in a fast-paced kitchen and outdoor event environment.

Key Responsibilities
  • Prepare ingredients, sauces, sides, and menu components according to recipes and prep lists.
  • Follow proper labeling, storage, rotation, and sanitation procedures.
  • Assist with sous vide bagging, sealing, cooling, and prep logs when assigned.
  • Maintain accurate prep organization and communicate shortages or issues.
  • Assist with buffet setup, presentation, replenishment, and cleanup.
  • Help portion, assemble, and organize food during service.
  • Maintain clean, stocked, and efficient prep and service areas.
  • Support the Head Chef, line cooks, grillers, dish team, and front-of-house staff as needed.
  • Assist with end-of-day cleaning, organization, sweeping, mopping, and prep for the following day.
Shared Outdoor Team Duties

All Fireside Feast employees are part of a hands-on outdoor hospitality team. In addition to the primary job duties, this role may include:

  • Helping build, maintain, monitor, and safely extinguish fires and fire pits.
  • Assisting with prep, setup, restocking, cleaning, and teardown.
  • Sweeping, mopping, trash removal, organizing supplies, and resetting guest areas.
  • Beginning-of-season setup and end-of-season breakdown/winterization.
  • Light manual labor, including moving supplies, carrying items, and helping maintain the site.
  • Trail and site maintenance, including minor trail repair and clearing walkways.
  • Assisting with passenger flow and guest movement.
  • Driving passengers in company vehicles when trained, authorized, and approved by management.
Qualifications
  • Food prep, kitchen, restaurant, or catering experience preferred.
  • Strong attention to detail and ability to follow recipes.
  • Good communication and time management skills.
  • Ability to work safely around food, knives, hot equipment, open flames, and outdoor service areas.
  • Able to work in rain, wind, and changing Southeast Alaska weather.
  • Valid driver’s license preferred.
  • Must be legally authorized to work in the United States.
  • Food Handler Card required.
